Lola’s French Pecan Pie Recipe

  • 4 egg whites
  • 1 ½ teaspoons of vanilla
  • 1 ½ cups of sugar
  • 1 cup of pecan halves
  • 33 Ritz or butter-type crackers
  • 1 ¼ cups of whipped cream
  • Extra pecans and chocolate curls for garnish

  1. Break crackers into coarse crumbs. Mix with pecan halves and set aside.
  2. Beat egg whites until stiff peaks form. Gradually add sugar and vanilla into egg whites while mixing. Remove from mixer and fold into pecans and cracker crumbs.
  3. Pour into a lightly greased 10” pie plate. Bake at 300 degrees for 30 minutes or until lightly browned. Cool and top with whipped cream.
  4. Garnish with pecan halves and chocolate curls.
  5. Yield: 1- 10-inch pie/ serves 8
