Lola’s French Pecan Pie Recipe |
- 4 egg whites
- 1 ½ teaspoons of vanilla
- 1 ½ cups of sugar
- 1 cup of pecan halves
- 33 Ritz or butter-type crackers
- 1 ¼ cups of whipped cream
- Extra pecans and chocolate curls for garnish

DIRECTIONS
- Break crackers into coarse crumbs. Mix with pecan halves and set aside.
- Beat egg whites until stiff peaks form. Gradually add sugar and vanilla into egg whites while mixing. Remove from mixer and fold into pecans and cracker crumbs.
- Pour into a lightly greased 10” pie plate. Bake at 300 degrees for 30 minutes or until lightly browned. Cool and top with whipped cream.
- Garnish with pecan halves and chocolate curls.
- Yield: 1- 10-inch pie/ serves 8
