Lola's Zucchini Bread |

Thanksgiving was always a special time with our family. My Grandma Lola had five children, of which my mother was second to the youngest. They lived on a small farm near Lebanon, Missouri and never even had running water until moving to Springfield in the early 1960's. My Grandma Lola was never afraid to use real butter or whole cream in her baking and cooking. I think they didn't worry about the calories because they worked it off around the farm! One of the best side dishes my Grandma always made for Thanksgiving was her Zucchini Bread. She would shred the zucchini and freeze it until ready to use in this moist and flavorful treat. |

Lola's Zucchini Bread Recipe |
- 3 eggs, well beaten
- 3 tsp. vanilla
- 2 c. shredded zucchini
- 2 c. sugar
- 1 c. oil
- 3 c. flour
- 1 tsp. salt
- 3 tsp. cinnamon
- 1/4 tsp. baking powder
- 1 tsp. baking soda
- 1 c. chopped nuts

DIRECTIONS
Beat eggs well. Add sugar, vanilla and oil. blend together well. Stir in zucchini Mix all remaining ingredients together except for the nuts. Blend into egg mixture, mixing well. Fold in chopped nuts. Pour into 2 greased loaf pans. Bake at 350 degrees for approximately 1 hour or until golden brown. Let cool 10 minutes then remove from pans and cool completely on wire racks.
Serve with fresh whipped butter! |
